Grilled Salmon Salad

To keep this salad fresh for a few days, assemble the ingredients in a bowl starting with the lettuce first. Keep the Romaine on one side of the bowl, and Arugula on the other side. Once the lettuce is in the bowl, place the remaining ingredients on top (grouped together by ingredients). Do not toss together or add dressing until you are just about ready to eat it.

 

Dressings that go well with this: a simple lemon vinaigrette

 

Recipe makes 1 salad (32 oz container). WW SmartPoints and nutrition values exclude dressing.

Ingredients

  • 2 cups chopped Romaine lettuce (rinsed and dried well)
  • 2 cups Arugula lettuce (pre-washed)
  • 4 oz salmon filet
  • 2 oz Hass avocado
  • 2 slices center cut bacon
  • 1/2 small cucumber (sliced)
  • 1 carrot (shredded with a box grater)
  • Sprinkle of Everything bagel seasoning

Directions

Cook the salmon:

Heat a pan on the stovetop (medium heat)

Spray with cooking spray

Place 4 oz salmon filet in the pan (skin side down - if there is skin)

Sprinkle with salt, pepper and garlic powder

Cook the first side for about 5 minutes, second side for about 3 - 4 minutes (US FDA recommends that the internal temperature should be 145 degrees F)

Remove from heat and set aside.

Remove skin and sprinkle salt, pepper and garlic powder on the second side.

Cook the bacon:

Heat a pan on the stovetop (medium heat).

Place the bacon in the pan and cook each side approximately 3 - 4 minutes or until the bacon is well done and crisp.

Set aside and chop in 1/2 inch peices.

Assemble all ingredients in a bowl starting with the lettuce first.

If you are preparing this salad to eat at a later time, do not toss it together or add dressing until you are just about ready to eat it.
