If you do not use fresh herbs to season your food, you are missing out on life. Not dried herbs, but fresh herbs. The fresh basil, sun-dried tomatoes, parmesan and balsamic dressing are a delicious combination, mimicking anti-pasta salad. I also love Arugula lettuce.

Yield/Servings: 1 Serving Size: 1 salad Total Cook/Prep time: 15 minutes


  • 2 cups chopped romaine lettuce
  • 2 cups arugula lettuce
  • 1/4 cup sliced sun-dried tomatoes (not in oil)
  • 3 oz. pre-cooked grilled chicken (seasoned with just S&P and garlic powder)
  • 1 oz. shaved Parmesan cheese
  • 4 kalamata olives
  • 5 or 6 raw broccoli florets
  • Handful of fresh basil leaves


Assemble the ingredients in a bowl

Drizzle with the dressing and toss together
