Mediterranean Style Salad

To keep this salad fresh for a few days, assemble the ingredients in a bowl starting with the lettuce first. Keep the Romaine on one side of the bowl, and Spinach on the other side. Once the lettuce is in the bowl, place the remaining ingredients on top (grouped together by ingredients). Do not toss together or add dressing until you are just about ready to eat it.

Recipe makes 1 salad (32 oz container). WW SmartPoints and nutrition information excludes dressing.

Yield/Servings: 1 Serving Size: 1 salad Total Cook/Prep time: 30 minutes

Ingredients

  • 2 cups chopped Romaine lettuce (rinsed and dried well)
  • 2 cups Arugula lettuce (pre-washed)
  • 3 oz grilled chicken breast
  • 1/2 red bell pepper (sliced)
  • 4 pitted Kalamata olives
  • 1 tbsp shredded Parmesan cheese
  • 1/2 medium onion (sliced)
  • handful of fresh dill

Directions

Grill the chicken (click here for instructions >)

Grill the onion:

Heat a small pan on the stovetop (high heat)

Spray with cooking spray

Add onions and sprinkle with a little salt

Cook for about 5 - 7 minutes (stirring a few times in between)

Remove from heat and set aside
