Mini Apple Pies

These delicious mini apple pies make a good breakfast, snack or dessert. You can serve them at parties and no one will suspect they are lightened up. The apples need a little head start in cooking because the pie crusts bake rather fast. Recipe makes 12 mini apple pies. 1 mini pie per serving.

Ingredients

  • For the pie crust:
  • 1 3/4 cup Bisquick (Heart Smart version in the white box)
  • 1 cup fat-free plain Greek yogurt
  • For the filling:
  • 6 - 7 Granny Smith apples (peeled and diced into 1/4” cubes) to get 6 cups diced apples
  • 1 cup unsweetened applesauce
  • 4 tbsp sugar
  • 1 tbsp cinnamon
  • 1 tsp all spice
  • 1/4 tsp nutmeg
  • 1/4 tsp salt

Directions

Preheat oven to 375

Spray a 12 section cupcake pan with cooking spray

Prepare the crust by mixing the Bisquick and yogurt in a bowl

Divide the dough into 12 pieces, and roll each peice into a meatball shape

Use a rolling pin to flatten each dough ball into a disc shape (roughly 4 - 5 inches in diameter - see video)

Use a spatula or dough scraper to lift the discs from the work surface and insert each into a cupcake section

Prepare the filling:

Heat the diced apples in a pan on low-medium heat

Add the sugar, cinnamon, allspice, nutmeg and salt

Mix to combine

Add the applesauce and mix to combine

Heat for about 8 minutes, then fill each dough-lined cupcake section with the filling

Bake for 20 minutes
