Mini Pizza

These mini pizzas are easy and delicious. They make a great party appetizer or a fun dinner my kids enjoy. I used a 3 inch round cookie cutter to shape the crusts.

 

Shown here is shaved Parmesan and basil on some, and 1/2 oz of mozzarella on the others. You can find the recipe for Marinara Sauce here, which is zero SmartPoints on all plans.

 

Recipe makes 12 mini pies. Serving size is 2 mini pies. 

Yield/Servings: 6 servings Serving Size: 2 mini pizzas Total Cook/Prep time: 45 minutes

Ingredients

  • For the dough:
  • 3/4 cup non-fat Greek yogurt (FAGE brand)
  • 1 cup self-rising flour
  • For the toppings:
  • 1 cup marinara sauce (distributed)
  • 6 tbsp. grated Parmesan cheese
  • a few fresh basil leaves
  • 3 oz mozzarella cheese

Directions

Pre-heat oven to 450 F

Line a large baking sheet with parchment paper

Mix the flour and yogurt in a bowl until it forms a ball of dough.

Place the ball of dough on a lightly floured surface

Using a rolling pin, roll the dough out to be about 1/4" flat (you can divide the dough in smaller pieces first to make it easier)

Use a 3" cookie cutter to cut out 12 circles of dough (you will need to re-roll the scraps to get the full 12 circles)

Use a spatula to lift the dough circles from the work surface onto a parchment lined baking sheet

Pre-bake the crusts for 10 minutes or so

Remove the pizza crusts from the oven and top with marinara sauce, cheese and basil (1/2 oz mozzarella per pizza, or 1 tbsp shaved parmesan)

Continue baking the pizza until the sauce is warm and the cheese is melted (about 10 more minutes)
