These mini breakfast egg bakes double as a crustless quiche that you can have as a side dish. Recipe makes 12 breakfast bakes/mini quiches. Serving size is 1 mini quiche.
Preheat oven to 350
Mix the eggs, half and half, salt and pepper in a bowl using an electric hand mixer (low speed) about 1 minute
Spray 12 section cupcake pan with cooking spray
Add about 1 tbsp of the chopped broccoli to each cupcake section
Pour/distribute the egg mixture throughout the 12 sections (they will fill up close to the rim)
Sprinkle/distribute the bacon bits on top of the egg
Bake 25 minutes
Allow the egg bakes to cool for 20 minutes before removing them from the pan
Store in a tupperware container or ziplock bag in the freezer if you plan to make these in advance for meal prep. Heat them in the microwave for about 30 seconds or so when you are ready to eat them.
