Oatmeal Stuffed Apples

These look a little fancy but they are so quick and easy to prepare. I bake mine in the toaster oven and take a quick shower while they are baking. If you don't have a toaster oven, a regular oven will do just fine. It's a filling, tasty breakfast for just 1 SmarPoints on the Green and Blue plan - or Zero SmartPoints on Purple.

 

 

Yield/Servings: 1 Serving Size: 1 apple Total Cook/Prep time: 25 minutes

Ingredients

  • 1 small baking apple (such as Honeycrisp or Granny Smith)
  • 1 tbsp old fashioned rolled oats
  • 2 tbsp unsweetened applesauce
  • Sprinkle of cinnamon
  • Sprinkle of allspice
  • Small pinch of salt
  • Cinnamon stick (optional)

Preheat toaster oven on bake setting to 450 F (or 375 F for a regular oven)

Wash the apple and slice the top off

Use a tablespoon to scoop out the middle of the apple 

Dice up the scooped-out middle piece of the apple (omit core) and set aside

In a small bowl, mix the oatmeal, applesauce, spices, salt and diced apples

Place the mixture into the hollow apple

Sprinkle with a little more cinnamon

Bake for 15 - 20 minutes
