I love that we can eat like this on WW. These pinwheel steaks are delicious and great on the grill.

 

Recipe makes about 10 steaks if you use a fairly thin 1 lb cut of Flank steak. 2 Pinwheels per serving.

 

 

Yield/Servings: 10 Pinwheels Serving Size: 2 pinwheels Total Cook/Prep time: 40 minutes

Ingredients

  • 1 lb lean Flank Steak
  • 4 cups arugula lettuce
  • 1/2 cup lite shredded mozzarella cheese (Trader Joe's brand used here)
  • 4 tbsp shredded parmesan cheese
  • 1 tbsp onion powder
  • salt and pepper

Directions

Carefully slice the flank steak in half horizontally

Pound out each half with a meat pounder to tenderize the meat and even out the slices

Sprinkle both slices of meat with onion powder, salt and pepper

Add 2 cups of the arugula lettuce to the top of each slice of meat

Add 1/4 cup of the lite shredded mozzarella to each slice of meat

Add 2 tbsp of shredded parmesan cheese to each slice of meat

Roll up each one as tightly as you can

Use twine to tie them closed

Make cuts in between the string so that each pinwheel has a tie to keep them closed (see video)

Preheat grill to about 400 degrees Fahrenheight 

Place the pinwheels on the grill

Cook each side about 7 minutes or until browned on both sides

Allow them to rest for about 10 minutes before serving
