The sauce/juice makes about 2 cups after the chicken is cooked but the amount of fat that the chicken adds to the juice varies. I typically "guesstimate" that the juice comes to 1 SmartPoint per tablespoon.

  • 1 whole roaster chicken
  • 1 large onion
  • 2 cups white cooking wine
  • Salt & Pepper
  • Garlic Powder
  • Dried Celery Flakes

Preheat oven according to the directions on the label of the chicken (usually 350 - 375 degrees F).

Rinse the raw chicken and take out the gibblets from the inside chicken cavity.

Tie the legs together with kitchen twine. Tie the wings with twine (see video).

Slice the onion into 4 thick, even slices and place them close together in the middle of a roasting pan.

Place the chicken on top of the onions in the roasting pan and add the white cooking wine to the pan.

Sprinkle seasonings on the chicken (salt, pepper, garlic powder, celery flakes)

Roast according to the label directions on the back of the chicken (it usually takes about 20 minutes per pound).

Spoon the wine juice over the chicken skin after about 1 hour during the roasting process (repeat every 25 minutes or so).

Remove from oven and allow the chicken to rest for about 15 minutes before slicing.

After slicing the chicken and plating it, pour 1 or 2 tbsp of the juice over the chicken meat.
