Scrambled Eggs with Ham and White Cheddar

My brother said I make the best scrambled eggs so for you Frank, here are the eggs. BTW, Frank is 21 years younger than me. He is the best kid brother in the whole world.

These eggs have diced ham and shredded white cheddar cheese. But the more important part of making these is to not overcook the eggs. I swirl the eggs in the pan, and when they are still a bit wet, turn off the heat and place them on the plate. Serve with fruit or whatever else you like.

Yield/Servings: 1 Serving Size: 1 Total Cook/Prep time: 10 minutes

  • 3 eggs (scrambled until frothy and bubbly)
  • 1/4 cup shredded white cheddar cheese (full-fat used for this recipe)
  • 2 slices canadian bacon (97% fat-free - diced)
  • spray of cooking spray
  • salt & pepper

Heat a small pan on low-medium heat

Spray with cooking spray

Add the diced ham and sautee it a minute or two

Pour in the eggs

Sprinkle in cheese

Swirl the eggs with a spatula or spoon periodically as they cook

Cook about 4 minutes, but go more by visual cues than exact cooking time. The eggs should be slightly wet when you remove them from the pan.
