These baja style tacos make it easy to stay on track. They are delicious, easy and light. Tortillas used here are small white Mission tortillas.
Recipe makes 6 tacos. Serving size is 1 taco.
Defrost shrimp if frozen
Wrap the 6 tortillas in foil and heat them in the toaster oven on the bake setting (450 F) for about 10 minutes
While the tortillas are heating...
Heat the shrimp in a pan on the stovetop (just until warm if you are using pre-cooked shrimp)
Set aside.
In a separate bowl, mix the diced cabbage, scallions and cilantro together
Mix the sauce ingredients together and blend it into the cabbage mix
Remove the warm tortillas
Assemble the tacos by distributing the cabbage mixture and shrimp in the tortillas.
Garnish with a little more fresh cilantro, chili powder and cumin
