This is not really a recipe as much as an idea for meal prep day. I find these little side salads to be really handy as a filler before meals - so I don't over-do it at dinner time. Having these prepared ahead of time makes it a lot easier and prevents me from over-eating when I'm very hungry.


Recipe makes 4 side salads. 1 side salad per serving.

Yield/Servings: 4 Serving Size: 1 salad Total Cook/Prep time: 20 minutes


  • 8 cups chopped ice-berg lettuce
  • 8 slices Butterball Thin and Crispy Turkey bacon (cooked and chopped)
  • 1 -2 Carrots (shredded with a box grater)
  • 4 hard-boiled eggs (peeled and cut)
  • 1 cucumber (sliced)


Distribute the ingredients in 4 containers - starting with the lettuce, and place remaining ingredients on top.

Do not toss ingredients together until ready to serve.

Store in the refrigerator up to 4 days.
