This is a super quick and delicious dinner you can make any night of the week! My whole family loves these.

 

You can find 96% lean ground beef at Target, Aldi, or Trader Joe's. Maybe other stores carry it too, but those are the ones I know of for sure. I got Whole Wheat hamburger buns at Trader Joe's which are 3 SmartPoints each (for all WW plan colors). If you do not have a Trader Joe's in close proximity to you, you can look for Light hamburger buns at your local grocery store. Just be sure to scan the barcode to check the Points. The meat mixture for this recipe comes to 2 SmartPoints (all WW plan colors).

 

Alternatively, you could skip the bun all together and serve with 1/2 cup brown rice instead (making this recipe just 2 SmartPoints on Purple - or 6 SmartPoints on Blue and Green).

Ingredients

  • 8 Whole Wheat Hamburger buns (Trader Joe's brand)
  • 1 1/4 lb. extra lean ground beef (96% lean)
  • 2 medium bell peppers (any color - diced)
  • 1 medium onion (diced)
  • 4 tbsp tomato paste
  • 1/4 cup water
  • 3 tbsp white vinegar
  • 1 tbsp ground cumin
  • 1 tbsp chili powder
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1/2 tsp crushed red pepper flakes
  • salt and pepper

Directions

Heat a large pan or skillet on the stovetop (low - medium heat)

Spray with cooking spray

Add the bell peppers and onions to the pan

Heat about 5 - 7 minutes or until the vegetables become slightly tender

Add the tomato paste, water, and vinegar to the pan

Stir to combine and heat for another 5 minutes

Add the ground beef and remaining ingredients

Cook another 12 - 14 minutes (stirring frequently), or until the ground beef is no longer pink

Add 1/2 cup of the meat mixture to each hamburger bun
