This is an easy, delicious side dish. Recipe makes 2 servings.
Note for this recipe: Once the acorn squash is cooked, the skin peels right off.
Preheat oven to 375.
Slice the acorn squash in half and remove seeds.
Place the squash halves on a baking sheet (open sides facing down)
Bake for about 30 minutes.
Remove skin.
Mash the squash up in a bowl with the salt.
Distribute one half of it on 2 plates.
Add 1 tsp of butter, 1 tsp of brown sugar and a sprinkle of salt on top of each serving.
Let it cool for about 10 minutes before serving.
