You can skip the boiling part on these pretzels, but they will taste more like pizza dough than pretzels. Boiling the pretzel dough with baking soda is what gives these awesome treats a very "pretzely" flavor.
Notes: Nutrition information for sodium does not include the pretzel salt sprinkled on the outside of the pretzel.
Mix the flour, baking soda and salt in a bowl
Add the yogurt and mix to incorporate into a ball of dough
Cover the dough with plastic wrap and let it rest about 30 minutes
Preheat oven to 400 degrees F
Line a baking sheet with parchment paper
Prepare the egg wash by scrambling the egg, water and salt in a separate bowl and set aside.
Place the dough on a lightly floured work surface
Split into 4 equally sized pieces
Roll each piece into a rope of about 18" - 22" long
Shape each rope into a pretzel shape (see video)
In a small, 1 quart pot, bring water and baking soda to a boil
Reduce heat to a simmer
Use a spatula to insert the first pretzel into the water
Remove the pretzel from the water when it starts to float (about 30 seconds) and place it on the parchment lined baking sheet
While the pretzel is still wet, sprinkle with salt or seeds
Repeat for all 4 pretzels
Bake for about 25 minutes
As soon as you remove the pretzels from the oven, brush them with the egg wash
Allow them to cool about 30 minutes before serving
