Thai Salad with Chicken Cilantro Mini Wontons

This totally delicious salad has Chicken Cilantro Mini Wontons, shrimp, edamame, fresh cilantro and more. It's easy to pack up and go.

  • 3 cups chopped romaine or green-leaf lettuce
  • 7 chicken cilantro mini wontons (Trader Joe's or Costco brand)
  • 6 frozen precooked shrimp (defrosted)
  • 1/4 cup edamame/soy beans
  • handful of fresh cilantro leaves
  • 4 - 5 slices of cucumber
  • 1 scallion (chopped)
  • Sprinkle of Sesame Seeds (optional)
  • For the dressing:
  • 2 tbsp soy sauce
  • 2 tsp sesame seed oil
  • 1/2 tsp sugar
  • 3 tbs fresh lemon juice
  • garlic powder


Heat the frozen chicken cilantro mini wontons in the toaster oven (450 F) for about 7 minutes or until fully heated.

Set aside to cool for a few minutes.

Mix the salad dressing ingredients in a bowl with a wire whisk

In a separate bowl, assemble the salad by adding the lettuce to the bowl. Drizzle the dressing on the lettuce and toss together.

Add the shrimp, wontons, soy beans, cucumber, scallions and cilantro to the top.
