Toasted Almond Banana Muffins

These tasty muffins are a breakfast you can enjoy at home, or take on the go. Be sure to use non-stick liners for these (foil liners are good). And after you sprinkle the topping onto the batter, gently press it in with a knife or fork to be sure you don't lose most of the topping during baking. See video for quick demonstration.


Recipe makes 12 muffins. 3 WW Freestyle Points per muffin (or 7 Points for 2 of them). 


For my friends outside the US - you can use regular self-rising flour in place of the Bisquick for this recipe. It will come out close enough.

Yield/Servings: 12 Serving Size: 1 muffin Total Cook/Prep time: 45 minutes


  • For the batter:
  • 2 cups Bisquick (Heart Smart version in the white box)
  • 2 eggs
  • 3/4 cup non-fat greek yogurt
  • 4 ripe bananas
  • 1 tsp vanilla extract
  • 1/2 tsp almond extract
  • 1 tsp cinnamon
  • For the topping:
  • 1/2 cup old fashioned rolled oats
  • 1/4 cup whole almonds (finely chopped)
  • 2 tbsp sugar
  • 1 tbsp cinnamon


Preheat oven to 350

Line a set of cupcake tins with non-stick liners (foil liners are good)

Mix the bisquick and cinnamon in a bowl

Set aside

Mix the eggs, yogurt, bananas and extracts using an electric hand mixer (about 1 minute). 

Add the wet ingredients to the Bisquick and cinnamon.

Stir to combine.

Distribute batter throughout the 12 cupcake sections. Set aside.

Prepare the topping:

Heat the rolled oats and almonds is a small pan on the stovetop (low heat) for about 5 minutes, or until lightly toasted.

Add the cinnamon and sugar to the toasted oats and almonds. 

Distribute the topping throughout the 12 muffins.

Gently press the topping mixture into the batter to be sure it sticks during baking. (see video for quick demonstration)

Bake for 25 minutes.

Remove the muffins from the pan after cooling about 10 minutes, then allow them to cool for 30 minutes more.
