This home-made Alfredo sauce is light and creamy with a hint of Parmesan and garlic. For the tortellini, I use regular frozen store bought, but brands and package sizes vary. Be sure the check the nutrition information on the tortellini package.
Recipe makes 4 servings. Serving size is 1/4 th of the recipe (8 shrimp, 1 cup tortellini, 3/4 cup broccoli, 1/4 of the sauce). WW SmartPoints and nutrition information includes the sauce.
To make the sauce:
Mix the milk and cornstarch in a bowl to thoroughly combine
In a small pot, heat the garlic and butter on very low heat for about 4 minutes
Add milk/cornstarch mixture to the garlic and butter
Simmer for 10 minutes stirring slowly but constantly
Remove from heat, add parmesan cheese, salt and pepper
Sauce with thicken as it cools
While the sauce is cooling:
Boil the tortellini in a pot until tender. Drain and set aside in a large mixing bowl.
Wash, trim and steam the broccoli for about 5 minutes
Add the broccoli to the bowl of cooked tortellini
Heat the shrimp in a pan on the stovetop
Add it to the bowl of broccoli and tortellini
Pour the sauce into the bowl and mix to combine
