You can use extra lean ground turkey or extra lean ground chicken in this recipe. Recipe makes about 8 servings (2 cups each).

Heat a stockpot on low heat
Spray with olive oil and add the onions. Sautee about 3 minutes.
Add the peppers and cook for 1 - 2 minutes more.
Add the ground turkey and mix as it cooks - until the turkey it is no longer pink inside.
Add the spices, tomatoes, water and bullion cubes.
Mix and let it simmer for at least one hour, or up to 2 hours.
Add the beans during the last 5 minutes of cooking.
