Waffle Iron Frittata

Don't worry if you get a little egg spillage over the edges of the waffle iron when you cook this. This fritatta bakes up nice and fluffy. When it's finished cooking, use a spatula to lift and remove it from the iron.


I used a 7" round waffle iron for this recipe. If your waffle iron is a different size, you may need to adjust the ingredients to better fit the waffle iron.


Recipe makes 2 servings (1/2 of the frittata is one serving).

  • 3 eggs
  • 1/2 cup cooked chopped spinach (drained well)
  • 2 oz. Trader Joe's lite shredded mozzarella
  • 3 thin slices of tomatoes
  • 1 tbsp grated parmesan
  • salt and pepper


Preheat the waffle iron.

Using a hand-held electric mixer, whip the eggs in a bowl for about 30 - 40 seconds (until bubbly and frothy).

Mix the spinach into the eggs.

Spray the waffle iron with cooking spray.

Slowly pour the eggs and spinach into the bottom half of the waffle iron.

Add the mozzarella, parmesan, tomato slices and salt and pepper.

Close the lid of the waffle iron.

Ignore the excess egg drippings from the edges of the waffle iron :-D

Cook for about 7 minutes or until the egg is fluffy and the cheese is slightly charred.

To remove the fritatta from the waffle iron: use a fork to lift the fritatta with one hand, while you slide a spatula underneath the fritatta and lift it out of the waffle iron onto a plate.
