Waffle Iron Quesadillas

This is a very quick and tasty quesadilla you can make in about 15 minutes. More of an idea than a recipe, you can mix and match your own ingredients to make this quesadilla any way you like.

Yield/Servings: 1 Serving Size: 1 Quesadilla Total Cook/Prep time: 20 minutes


  • 2 small low-carb / high-fiber tortillas
  • 3 oz chopped grilled chicken breast (pre-cooked)
  • 1/3 cup frozen spinach (heated and drained)
  • 1/4 cup Trader Joe's Fancy shredded lite Mexican blend cheese


Pre-heat waffle iron.

Spray with cooking spray.

Place one of the tortillas on the bottom side of the waffle iron.

Place chicken, spinach and cheese onto the bottom tortilla.

Then place the remaining tortilla on the top of the ingredients and close the waffle iron lid.

Grill for approximately 5 - 7 minutes or until cheese is fully melted and you can see the marks of the waffle iron grid.

Use a spatula to remove the quesadilla from the waffle iron.
