Waffle Iron Western Omelette

I used a 7" diameter waffle iron for this. If you have a different size waffle iron, you may need to adjust the amount of peppers and/or eggs used for this.


I like using the waffle iron as an indoor grill sometimes. It cooks both sides of the omelette and gives a nice little char on the cheese without sticking.

Yield/Servings: 1 Serving Size: 1 omelette Total Cook/Prep time: 10 minutes


  • 3 large eggs (scrambled)
  • 1/2 cup diced bell peppers and onions
  • 1 oz swiss cheese
  • salt and pepper
  • cooking spray


Preheat waffle iron

Spray both sides with cooking spray

Add diced peppers and onions

Close waffle iron lid and allow the peppers and onions to cook for about 3 minutes

Add scrambled eggs and cheese (see video)

Close lid and cook for about 3 minutes more

Use a fork and a spatula to remove the omelette and transfer to a plate
