This is a fun and easy summer treat you can enjoy for special occasions or for no occasion at all. One 8oz container of lite whipped topping covers about 12 cupcakes (each cupcake having 2 tbsp of topping). Coolwhip recommended over the canned whipped cream because it holds its shape better and will not melt onto the watermelon. Be sure to use a stirdy plastic cup such as the red SOLO party cups to cut the shape of the watermelon.
You will have leftover watermelon which you can cut into wedges and store in the refrigerator.
