Watermelon Mint Salad

Another Panera Bread inspired lunch here. Panera used to have a summer salad with watermelon, mint leaves and feta cheese. It was my all time favorite. So I recreated my own version here.


Recipe makes 1 salad with leftover dressing. WW SmartPoints and Nutrition information includes dressing.

Yield/Servings: 1 Serving Size: 1 salad Total Cook/Prep time: 20 minutes


  • 3 cups chopped green leaf lettuce (arugula is also very good)
  • 1 cup watermelon (cut in small cubes)
  • 1 tbsp roasted pumpkin seeds
  • 1 oz crumbled feta cheese
  • handful of chopped fresh mint leaves
  • For the dressing:
  • 5 tbsp white vinegar
  • 1 tbsp canola oil
  • 1 tsp dijon mustard
  • 1 tsp sugar


Assemble the salad ingredients in a bowl

In a small jar, add the dressing ingredients.

Secure the lid and shake vigorously to combine.

Pour 2 tbsp of the dressing over the salad.
