This dish is a family-friendly meal, or can be served with chips as a party appetizer. Almost all of the SmartPoints are in the full fat Shredded Pepper Jack cheese blend (Trader Joe's brand used here), which I find to be totally worth it. This dish makes me feel like I ate Taco Bell - but without the gross feeling I get after actually eating Taco Bell. :-D
Recipe makes 8 servings.
Spray a stock pot with cooking spray and heat on low-medium heat
Sautee the onions, carrots and green pepper for about 3 minutes
Add the ground turkey, cumin, chili powder and garlic powder
Stir to combine and cook until the ground turkey is no longer pink
Add the water, bullion and corn starch
Mix to combine and allow it to simmer about 45 minutes, or until the carrots are tender
Spread the chili into a baking pan and sprinkle the cheese on top
Heat oven to broil setting and move rack to highest position
Bake/broil for about 10 minutes, or until the cheese is fully melted and slightly charred
Use a spatula to divide into 8 portions and serve as a meal,
OR, keep it in the baking pan and serve with chips as a party appetizer dish.
