Zucchini Parm

This is a very basic, but delicious zucchini parm recipe you can make in less than 30 minutes if you have the marinara sauce prepared in advance. Just heat the sauce, sautee the zucchini, add the cheese, then broil and add sauce. I don't like to turn my regular oven on in the summer time, so I used my toaster oven to broil these, but you can use whichever method you prefer.

Recipe based on 12 slices of zucchini (but you may end up with more or less depending on the size of your zucchini). Slices shown here are about 1/2 an inch thick, and 2 inches in diameter. Serving size is 1 zucchini parm slice.

Ingredients

  • 1 - 2 medium zucchini (cut into 12 slices)
  • 12 tbsp shredded parmesan cheese (distributed)
  • 12 tbsp marinara sauce (distributed)
  • handful of chopped fresh basil
  • cooking spray
  • salt and pepper

Preheat a large pan on the stovetop (medium heat), about 2 minutes

Spray with cooking spray and add the zucchini slices

Sautee each side about 4 - 5 minutes each, or until slightly charred. Add a little salt and pepper.

Set the zucchini aside on a parchment or foil lined baking sheet (for easy clean up)

Distribute 1 tbsp of the shredded parmesan cheese onto each circle

Broil in the regular oven, or the toaster oven until the cheese is slightly charred (about 10 minutes)

Heat the marinara sauce in a small pot on the stovetop (low heat, just until hot)

Distribute about 1 tbsp of the sauce onto each zucchini slice

Sprinkle with a touch more parmesan and the fresh basil

Place the zucchini slices on a platter for serving
