Zucchini Tots

These tots are delicious! 2 WW Freestyle Points for 10 tots. Just a fair and honest warning that these are a bit of work for a side dish. You may want to make these on a day you are feeling really ambitious in the kitchen. 


Recipe makes 4 servings of 10 tots - about 40 tots in total (1 1/2 tsp of the mix per tot).


*NOTE: If you end up with a different number of tots - adjust the serving size accordingly - or adjust the Points value. The total points value for the entire recipe is 7.

  • 3 cups densely packed shredded zucchini (shredded using a box grater)
  • 1 medium onion (also shredded using a box grater)
  • 1/3 cup plain breadcrumbs
  • 3 tbsp shredded Romano cheese
  • handful of finely chopped fresh basil
  • 2 tsp salt
  • 1 tsp garlic powder
  • sprinkle of black pepper
  • spray of olive oil


Place the shredded zucchini and onions in a large bowl.

Add the salt and massage the salt into the zucchini and onions (this will help to release the water in the vegetables)

Allow the mixture to sit in the bowl undisturbed for 30 minutes 

After 30 minutes, use a mesh strainer to drain all the water out. Press down with the back of a spoon and be sure to remove as much water as possible. Pat the mixture dry with a paper towel.

Place the zucchini and onions in a dry bowl.

Add remaining ingredients and mix to thoroughly combine

Preheat oven to the broil setting

Form the mixture into small oval balls (1 1/2 tsp of the mixture per ball)

Place on a parchment lined baking sheet

Spray with a light spray of olive oil

Broil about 20 minutes (or until nicely browned) rotating the tots a few times in between
